Modern gluten is not the gluten your ancestors ate, Queen. Wheat has been hybridized and modified beyond recognition. Many people have sensitivities they don’t recognize - bloating, fatigue, brain fog. The intestinal inflammation from gluten can trigger autoimmune responses. If you must have grains, ancient varieties like spelt, kamut, or einkorn are less inflammatory. Better yet, focus on naturally gluten-free grains - quinoa, amaranth, wild rice, teff.
